My husband is an omnivore and prefers to eat the non-vegan version of many of our meals. This meal is the exception! He looks forward to it every single time. Just a quick sauté of some vegetables and the ingredients are ready to be thrown in the pie crust to cook! If you’re looking for a healthy alternative to egg-based quiche, I’m not sure this is it. But if you’re looking for a egg and dairy free quiche to impress everyone, you’re in the right place.

Egg-free + dairy-free, this plant-based egg, cheese, + sausage quiche is perfect for new vegans to witness the potential that vegan products have!

We love to serve this with a side of air-fried home fries, ketchup, and sriracha. For brunch serve with fruit salad or orange juice!

Easy Egg-free Dairy-free Quiche with Just Egg Scramble

Ingredients

  • pre-made pie crust, frozen or thawed
  • 1 bottle of Just Egg liquid
  • 1/2 tsp kala namak (Himalayan black salt)
  • 1/2 cup onion, chopped
  • 2 TB bell pepper, chopped
  • 1 Roma-size tomato, chopped
  • 1/3 cup vegan cheese, shredded, any flavor
  • 1 Field Roast Apple Sage sausage, or 3 Field Roast breakfast sausages, crumbled or diced

Directions

  1. Parbake the crust: preheat oven to 400F. Cover pie crust with parchment paper/foil and fill with baking beans* to keep crust from rising. Bake for 12 minutes, reduce heat to 325F and cook for 8 extra minutes after removing the beans and paper/foil and pricking holes in the bottom of the crust.
  2. Sauté the onion and bell pepper in a pan. Add the sausage if you want it to be browned.
  3. After removing the crust from the oven, sprinkle the cheese on the bottom of the pie crust.
  4. Add the sautéed vegetables, half the chopped tomato, and crumbled sausage. Sprinkle half the kala namak over.
  5. Evenly pour the Just Egg into the crust and sprinkle the rest of the kala namak and tomatoes on top.
  6. Bake for 60 minutes or until center is set! Use a toothpick to make sure the center is not too runny.
  7. Let cool for 10 minutes and cut into 6 slices.
